This is really good and easy, too.
4 skinless, boneless Chicken Breasts, 6 ounces each
1 small pkg. Cream Cheese
4 slices of Bacon
1 can Condensed Cream of Chicken Soup, 10.7 ounches
1/2 cup of Mayonnaise
1/2 cup Milk
1 teaspoon Lemon Juice (fresh or bottled)
1/4 teaspoon Pepper
Pinch of Salt (or don't add any)
Preheat oven to 325 degrees F
Place chicken breast between two pieces of waxed paper and pound until flattened. Divide cream cheese into four sections. Place one piece of cream cheese towards top of chicken breast, sprinkles with Chives and roll up. Wrap one piece of bacon around the chicken. Place chicken with the end of the bacon down into an oven proof baking dish. Put aside. In a medium sized bowl, place the soup, Mayonnaise, milk, lemon juice, pepper and salt (optional) and stir together until well blended and has a smooth texture. Pour
over the top and around the chicken rolls in the baking dish. Bake for one hour.
Serve with mashed potatoes and a green vegetable, such as Lima Beans.
