2 eggs, beaten
2 Tbsp. milk
1 qt. vanilla ice cream
1 c. pound cake crumbs
Combine eggs and milk. Take a scoop of ice cream and
roll it in cake crumbs. Pack crumbs firmly with hands. Dip in egg and milk mixture, then roll again in crumbs and pack firmly. Wrap in plastic wrap or aluminum foil and freeze. Repeat procedure, making 6 ice cream balls.
Heat oil to 320 degrees in 2 quart saucepan (use enough oil to fill pan one-third full). Place ice cream ball in hot oil and keep turning quickly until uniformly brown, about 30 seconds. Serve immediately. Makes 6 servings.
Note: Can be made ahead and frozen in foil-wrapped
balls. Can be topped with sweetened fresh strawberries or hot fudge
