Mermaid Cake

Use this mermaid on top of your cake or surround it with individual cupcakes with edible sugar shells or little fish... This is sure to delight any little girl on her birthday.  The sand can be made by using brown sugar. To make edible sugar shapes click here!

Use two mini sponge cakes for the base.  The top layer is just a bit smaller than the bottom layer.  Mix nuts and chocolate to make the rocks around the base of the cake and cover the cake with chocolate frosting to complete.

Using a Barbie or other doll... cover with rolled fondant like the picture above.

Using the rolled fondant, cut white scales and color part of the rolled fondant dark pink and cut scales and the sea shell top.

After positioning the doll on the cake.  Simply brush each scale with a little egg white and stick in place.  Do the same with the sea shell top.
